FindTheBest always seemed to order too many bananas. I guess it wasn’t that there were too many but when Costco would ship them they were either all bright green or all brown. There was no in between. The only logical conclusion was for me to take them home and make banana bread.
But it just so happened to be my bestie Talia’s birthday so I decided – hey how about a banana cake? Recipe is below, enjoy!
Banana Bread Recipe
- 5 Tbsp. butter
- ½ cup sugar
- ½ cup brown sugar
- 1 egg
- 2 egg whites
- 1 tsp. vanilla
- 1 cup mashed banana
- 1 ¾ cup flour
- 1 tsp. baking soda
- ½ tsp. salt
- ¼ tsp. baking powder
- ½ cup heavy cream
Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, brown sugar, egg, vanilla, and cream. Sprinkle the dry ingredients over the mixture and mix in. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour and 15 minutes at 350 degrees. Remove from pan and slice to serve.
Cream Cheese Frosting
- 8 ounces cream cheese, room temperature
- 8 tablespoons (1 stick) unsalted butter, cut into pieces, room temperature
- 1 cup confectioners’ sugar
- 1 teaspoon pure vanilla extract
Put cream cheese into bowl. Soften cream cheese by stirring with spatula, add in butter, continue beating until well blended. Sift in confectioners’ sugar, and continue beating until smooth. Add vanilla, and stir to combine.
I added some food coloring to the left over frosting and used it to write on the cake. Just add a few sprinkles and some candles and there you have it! Plus a very happy 23 year old Talia.
